What's Cooking?!



This week I wanted to share one of my favorites. I know there are a ton of different versions of Taco Soup out there but this one is adapted by me from a few different ones we have tried. I have had so many people ask for this recipe so i'm excited to have it one spot to share with you guys. It is so easy, delicious and makes a lot!


THE Taco Soup
1 pound ground beef
1 onion chopped
15oz can black beans (rinsed/drained)
15oz can pinto beans (drained)
15 1/4 oz can of corn
28oz diced tomatoes (don't drain)
10 oz rotel (don't drain)
1 liter tomato juice
1 envelope dry ranch mix
1 envelope taco seasoning

Optional toppings:
Mexican blend cheese
Sour cream
Avocado
Tortilla chips

Directions:
Brown ground beef with onion until done and drain
Add ranch and taco envelopes to beef, mix thoroughly
Add beef to large pot
Add rest of the ingredients to the pot and heat through (I let it simmer for a good hour or until everyone is ready to eat)
Serve with toppings and enjoy!

Sounds and looks amazing!! I love taco soup and yes, always try to find a good recipe online, but none really seem like what I've had before, so this looks fabulous and being just out of college without a "big girl" job yet (playing around working at Disney right now! lol) This seems like the perfect thing for me, room for lots of leftovers for this lone eater! :) Thanks for sharing!

We have taco soup often here at our house! We love it! My recipe is very similar to yours and is also delicious. We eat it over chili cheese fritos, and it's AMAZING! It's like a jazzed up frito pie!
