What's Cooking??


Welcome to "What's Cooking??"! A place for us to link-up, share recipes and see what everyone has been cooking this week! I'm still obsessed with my new Crock pot so I decided to make this "Cheesy Chicken and Rice" recipe that I found on Pinterest.

Cheesy Chicken and Rice
Ingredients
  • 4 boneless skinless chicken breasts
  • 1 large onion, chopped (I use Vidalia)
  • 1 -8 ounce box Zatarain's Yellow Rice Mix, cooked according to directions
  • 1 cup cheddar cheese
  • 1 - 10.5 ounce can cream of chicken soup (regular or fat free)
  • 1 -15 ounce can whole kernel corn, drained
Instructions
  1. Place chicken in bottom of slow cooker. Scatter chopped onion over top. Spoon cream soup over top of that. Cover and cook on low 7-8 hours or on high 3-4 hours. A few minutes before serving, add in cooked rice, corn, and cheese. Stir to combine. Serve hot.



Not all recipes will be great...and I will share the good and the bad. It was super easy! I used white rice because that's what I had on hand. I'm not sure if the yellow rice will make a difference but Zane and I found it to be very bland. I may try it again with the yellow rice but it'll be a while. 


Next week i'm going to tackle a roast! So....What's Cooking??

I didn't take photos, but I'll start. I have a LOVE/HATE relationship with my crock pot. I LOVE it when it comes our great, but sometimes? Eh...

Friday, we did Baby Ray's BBQ Chicken Sandwiches. They were GREAT!
